His Executive Chef and Mentor when he was training, Peter Kromberg, had been Executive Chef at Siam Intercontinental in Bangkok for many years so, not only knew a lot about Thai cusine, but also employed quite a few high end Thai chefs in his 'brigade' who Peter enjoyed learning from. It is a country with a long history of unbroken independence so, unlike many other cuisines, it remains true to it's historic roots with a delicate balance of spices and aromats that help make Thai food interesting and popular.
