With travel from Britain to France probably off the cards for this summer, Peter Vaughan is  bringing a touch of Classic French Summer Cookery to Vaughan’s Cookery School. 

Having worked as a chef in France and spent time talking to and working with famous French Chefs such as Raymond Blanc and Albert Roux (Michel Roux Jnr's father), Peter is a member of the Royal Academy of Culinary Arts, along with Heston Blumenthal, Tom Kerridge and many other top chefs.

Particular attention will be paid to hand-sanitising, the group size will be limited to 6 to allow for social distancing, you will work on your own food and masks will be available.

On the menu will be:

  • Salade Lyonnaise - an incredible combination of 4 basic tastes & ingredients, you’ll learn to master poaching an egg, the classic French way.  
  • Tarte Flambee -  a unique Alsace style crisp flat bread with creme fraiche, emmenthal, white onions and nutmeg
  • Sole Meuniere - cooking fish meunière method is as French as can be plus learning  to cook sole perfectly is a true joy. It is one of the most delicate & sweetest flat white fish.  
  • Flan Parisien - don't really hear of this dish in the UK, but walk into any patisserie in Northern France and you will end up with one in your shopping basket!

This can be made suitable for vegetarians, but not dairy free. Let us know when you book.  It is suitable for all levels of culinary skill.

We provide everything you need PLUS we do the washing up!

During the day you will enjoy lunch, with a glass of wine or non-alcoholic refreshments. There will be goodies to take home.
