Paul Suter has been a chef for over 25 years and has cooked in all sorts of businesses from country house hotels, to gastro pubs, contract catering, private dinners, wedding events etc.  He demonstrated his expertise with fish when he taught on our professional course in the summer. We are delighted that he will be sharing his skills with you in this class . As you will have seen if you watch Professional MasterChef, anyone who can cook fish perfectly receives respect from other professionals in the industry, because it is a skill that requires understanding and practice. This session is a no nonsense approach to improving your ability to prep, cook and present one of nature’s incredible ingredients . 

Vaughan’s Cookery School will provide you with contacts for fish companies that will deliver sustainably sourced fish, without plastic or polystyrene packaging direct to your home.

On the menu:

  • Sustainability, recognising freshness, texture difference of flat, flaky and firm varieties.
  • Learning when fish is over cooked & the negative effects it has on texture and taste.
  • Preparing a whole fish - flat & round
  • Meuniere & baking
  • Sauces to accompany fish:

There will be lots of tips from Chef on how to present your efforts so that your final dish looks attractive and enticing.

The class will be a busy hands-on session with aprons, equipment and ingredients all provided.

You will finish the class eating some of the food you have made, accompanied by wine or a non-alcoholic alternative. There will be goodies to take home.

The group size is small and is suitable for all skill levels.
