Fred the Forager's Gourmet mushroom courses are featured in the BBC Countryfile UK Top 10 and people from all over the country come to visit him in Wiltshire to learn the art of mushroom foraging. Peter Vaughan is a keen forager and has been using 'wild' ingredients in his restaurant, The Bistro, Devizes, for many years.

Fred regularly eats over 130 species of wild mushrooms and will show you how to find and safely identify a few of the easier to spot gourmet delicacies that will introduce a new palette of flavours to your cooking. Many different edible mushrooms can be found at this time of the year but what we find will depend much on the autumn weather.  However, there is always the possibility of discovering:

  • delicious porcini
  • brightly coloured wood blewits
  • monks head
  • the prince
  • the hedgehog
  • even the dubious looking (but edible) 'stinkhorn'!

As the season for finding edible plants in abundance draws to a close, the mushrooms inevitably are the stars at the end of the foraging year.

Back at base (the cookery school) Peter will show you how to create interesting and tasty dishes with what you have found including:

  • Mushroom duxelle
  • mushroom and watercress soup
  • beer, cheese & mushroom bread

The class is a busy hands-on session with aprons, equipment and ingredients all provided.

There will be a light lunch with wine, made from your foraged food but also enough to take home some samples.

Suitable for all culinary skill levels, it can be made suitable for vegetarians and special dietary requirements.  Let us know when you book.
