Having spent some time travelling in India, Peter has come to the conclusion that street food is where the greatest understanding of how to use ingredients effectively in order to maximise flavour.  He keen to share what he has learnt about the exciting and vibrant taste and flavour you can create quite easily in your own kitchen.

Indian food in the UK is no longer confined to the usual British offerings: korma, tikka , balti and other dishes, most of which are mediocre and not authentic anyway! Nowadays there are Michelin star restaurants that produce Indian food that is a world away from the local takeway.

This day will focus on the cuisine of central and western India.  The menu for the sessions will include:

  • The A-Z of garam masala - what is it, how to make it and what to do with it
  • Rice pilaff
  • the art of making naan
  • Goan masala

... and much more.

The class is a busy hands-on session. All equipment, ingredients and aprons are provided PLUS we do the washing up!

Whatever your skill level the small group size (maximum 8) enables you to get plenty of attention, whether you want to be helped or stretched. You will be working in a friendly and sociable environment.

A light lunch with wine or beer (goes well with spicy food) will complete the experience and there will be plenty to take away with you.
