In recent times the Chef's Table has become a feature of upmarket restaurants. Customers book a table in the kitchen, where they can see their food being cooked and receive special attention from the Chef. Vaughan's Cookery School is delighted to introduce a similar concept at their Cookery School in Devizes, except the kitchen will not be as noisy and busy, as no other guests will be served!

As this falls on St David's Day and Peter Vaughan is half Welsh, he will take his inspiration for this evening's menu from Wales but, of course, will give it his inimitable 'twist'.  Having worked in fine dining and Michelin starred restaurants, he chose to settle in his county of birth, Wiltshire, twenty years ago and develop his own 'naturally balanced' style of cuisine. He will be delighted to share his tips and tricks with you.

The menu for this evening will celebrate the arrival of Spring, as well as celebrating that very Welsh ingredients - the leek.

Welcome drink on arrival (alcoholic and non alcoholic version available)

Starter: Etuve of leeks with lemon risotto

Main: Chicken & Tarragon escalopes; potato & leek Dauphnoise; leek ash (using vegetable ash is all the rage in Michelin Star restaurants and on MasterChef at the moment - Peter will show you how to make it)

Dessert: Chocolate Truff with raspberries and Frambose liqueur (The contrast between the richness of the chocolate and the sharpness of the raspberries is simply delicious)

The price covers food and drink.

White and red wine or a non-alcholic drink will be available to have with your meal.

The evening  is an eating experience first and foremost and so there is no hands on cooking by the customer.
