Vaughan's Cookery School is delighted to welcome a new guest tutor. Jonathan Williams is a highly qualifed and experienced chef who is passionate about Italian food. He has travelled extensively in the country, picking up tips and recipes along the way. The dishes appear to be simple and use a range of quality ingredients but, knowing the tips and techniques are what transform these two elements into an amazing meal. The contrast in regionality from Venice to Tuscany, the Amalfi coast, Sorrento, Naples, Rome etc, each one with their own signature dishes, he finds fascinating. 

As Executive Head Chef of Bath Racecourse, Jonathan has an imaginative and creative flair with a unique style of presentation.

In this session you will learn how to make:

  • Wild mushroom & truffle arancini - making rissotto then arancini, which translates as little oranges
  • Tuscan pazanella salad - a peasant salad of seasonal ripe ingredients using up stale bread
  • Ragu di Bologna - traditional Italian meat sauce using the principles of soffrito, the 'holy trinity' of Italian cooking
  • Perfect pannacotta - wth just the right amount of 'wobble'

The class is a busy hands-on session.  All ingredients, equipment and aprons will be supplied PLUS we will do the washing up!

The small group size (maximum 10) enables you to get plenty of attention, whether you want to be helped or stretched. You will be working in a friendly and sociable environment.

The evening will finish with supper (including wine) and you will have some goodies to take home.
