Tom Dodd, Vaughan's Kitchen Head Chef (Events) is passionate about Spanish cuisine and teaches all the Spanish cookery sessions at Vaughan’s Cookery School. This evening he will introduce you to particular dishes from the Community of Madrid, which is an amalgamation of the cuisines of various regions of Spain.   

These have developed, in part, by mass migration to the capital city, which started during the reign of King Felipe II. As the city grew, it incorporated the culinary traditions of the municipalities that were absorbed into the area now known as the Community of Madrid.

The menu for this evening:

Drinks on arrival - Mahou/wine or non-alcoholic lemon & cinnamon spritz

Starters - Tapa

◦ Soldatidos de pavia - salt cod strips in batter - tartare sauce
◦ Croquetas with wild mushrooms and blue cheese
◦ Filled chicory leaves with tomato and roasted pepper salsa

Main course

◦ Cocido madrileño - a chickpea based meat stew that has been made in Madrid for centuries. 
◦ Potatas bravas
◦ Saute spinach with garlic


◦ Torta de Santiago with creme fraiche and caramelised oranges

Teas and coffees

The price covers food and drink. There will be wine to accompany the dishes with non-alcoholic drinks will be available as an alternative.

Most special dietary requirements can be catered for - please notify when booking.

The evening  is an eating experience first and foremost and so there is no hands on cooking by the customer.
