Fish and seafood are easy to spoil - a lot of people don't know how to check for freshness or how to prepare and cook properly. Once you know the best ways to bring out the flavour in this fantastic ingredient, it gives you many options for fast, nutritious and tasty meals. Kim will show you how to prepare fish from scratch, what to do with the trimmings and then how to prepare a variety of dishes that will please your friends and family. Originally from New Zealand, Kim has grown up eating and cooking seafood plus has travelled the world, picking up ideas for interesting dishs along the way.

Tasty, nutritious and often very reasonable price-wise, this class will help you with how to:
- identify fresh fish
- the best way to fillet, prep then cook it to perfection
- Shellfish will also be covered and you will get to prep and cook tiger prawns, stuffed baby squid and mussels
- learn the art of Japanese tempura
- make a few special salsas that will enhance your dishes and go well with the delicate flavours.
There will be lots of tips from Chef on how to present your efforts so that your final dish looks attractive and enticing.
The class will be a busy hands-on session with aprons, equipment and ingredients all provided.
You will finish the class eating some of the food you have made, accomapnied by wine or a non-alcoholic alternative.
This course is suitable for all skill levels. The group is small with a maximum of 10.
