A Taste of Italy | July 25th | £60

As it doesn't look as if you will be able to go to Italy this summer, Peter Vaughan is bringing Italy to you. Delivering the very popular menu designed by Jonathan Williams, Executive Head Chef of Bath Racecourse, who normally runs this course, Peter is confident and excited by Italian cuisine. When he was an apprentice, his best friend was Italian and he spent many happy weekends cooking with Dad, Luigi and learning all about Italian cuisine. The dishes appear to be simple and use a range of quality ingredients but, knowing the tips and techniques is what transform these two elements into an amazing meal.

Particular attention will be paid to hand sanitising and you will be working on your own socially distanced side by side with only 6 in the group. Spaces are limited so book quickly.

In this session you will learn how to make:

  • Wild mushroom & truffle arancini - making rissotto then arancini, which translates as little oranges
  • Tuscan pazanella salad - a peasant salad of seasonal ripe ingredients using up stale bread
  • Ragu di Bologna - traditional Italian meat sauce using the principles of soffrito, the 'holy trinity' of Italian cooking
  • Perfect pannacotta - wth just the right amount of 'wobble'

The class is a busy hands-on session.  All ingredients, equipment and aprons will be supplied PLUS we will do the washing up!

The small group size enables you to get plenty of attention, whether you want to be helped or stretched. You will be working in a friendly and sociable environment.

The class will finish with lunch (including wine) and you will have some goodies to take home.
