Wednesday 7.00pm- 9.30pm | Led by Peter Vaughan

Chef Peter Vaughan worked as a chef saucier for a Michelin star chef, who trained under the famous ‘Toisgros brothers‘ in Lyon in their 3 Michelin starred restaurant, which was world famous for its Incredible sauces. On this course you will learn to make 3 of the most iconic ‘dinner party‘ sauces that are served in most 5 star Luxury Hotels & restaurants. One of the greatest French chefs , Fernand Point , Once said:

"A delicious sauce is what distinguishes a great cook . Making a brilliant sauce is like being a soloist in the orchestra of a great kitchen."

On the menu:

  • Hollandaise: you’ll learn The A to Z of this internationally known classic Dutch sauce, all the way from clarifying to how to correct it if the sauce splits (as it often does at the worst possible time!) 
  • Sauce Diane : one of the most famous 1950/1960’s American sauces - ideal with steak, grilled mushrooms, or roasted squash 
  • Bearnaise: a unique tarragon reduction turns this sauce something truly spectacular

This is a busy hands-on session.  All ingredients, equipment and aprons will be supplied PLUS we will do the washing up!

The small group size enables you to get plenty of attention, whether you want to be helped or stretched.  You will be working in a friendly and sociable environment.

The evening will finish with supper and wine and you will have plenty to away with you.
