Kitchen Essentials Course
This intensive 3 week full-time or 12 week part-time cookery course gives you a thorough grounding in the fundamentals of cooking, including all aspects of good kitchen practice. It is popular with those looking to boost kitchen confidence, start or further a career in the food industry or gain an internationally recognised culinary qualification. You will experience all aspects of cooking, learn from highly experienced and qualifed chef tutors and be inspired to enhance your culinary skills to a professional standard; whatever level you are starting from.

Peter Vaughan, an award winning chef and member of the Royal Academy of Culinary Arts, heads the team. He has worked in a variety of fine dining, Michelin starred establishments, as well as running his own restaurant. Nowadays, as well as the cookery school, he has his own event catering business where candidates can gain work experience. Peter is known for his infectiously enthusiastic teaching style that always leaves you inspired.
Peter's teaching team are all highly experienced and well-qualified, including an accredited qualification in nutrition. They have developed a curriculum that is interesting and creative, incorporating the naturally balanced and environmentally responsible ethos for which Vaughan's Kitchen & Cookery School is known.
What Will I Learn?
Students are taught in small groups (maximum 8) and the learning envirnmant is practical and hands-on. You will learn about:
- Meat, poultry and fish: how to prepare, cook and finish
- Vegetables: how to prepare, cook and finish
- Soups: how to prepare, cook and finish
- Cakes, pastries, biscuits and breads: how to prepare, cook and finish
- Knife skills
- Special dietary requirements
- Plant based dishes and the importance of this type of cuisine
- Naturally balanced tips that maximise nutrition without compromising on taste
- Sustainability and environmental awareness in the kitchen
- All aspects of food safety and good kitchen practice
- Time planning
Level 2 Award in Cookery Skills 603/6705/2 - CTH (Confederation of Tourism and Hospitality).
Level 2 Award in Food Safety in Catering Award - RSPH (Royal Society for Public Health)
£1,850 which includes:
- 90 hours of training
- Course recipes & notes
- All ingredients and equipment
- Daily refreshments and lunch plus food to take away
- 2 x chefs aprons

- Access to on-line recipe library
- External exam and assessment fees for CTH and RSPH

Work Experience Opportunities
