Braised Red Cabbage

A traditional winter dish that is tasty and colourful plus easy to make in advance.  It develops it flavours and benefits from being made the day before and reheated when required.

1 small red cabbage

250ml glass red wine or apple juice or cider

2 tablespoons of maple syrup or honey or dark brown sugar

1 finely diced apple

8 black peppercorns, crushed

1/2 teaspoon salt

  1.  Preheat oven to 180C
  2.  Shred cabbage finely or chop into chunks and 'blitz' in food processor
  3.  Put in a pan with all other ingredients.
  4. With lid on, bring to a simmer and cook on lowest heat on hib for 20 minutes.  Alternatively put in iven for 40 minutes.
