Fricasee of Greens

Delicious and different way to serve vegetable that can get boring.  Although kale (hailed as one of the new 'superfoods') is used in this recipe, any green leafy vegetables will do.  It has the advantage of being quick and easy as well.

250g kale or any other green leafy vegetable

25g salted butter

1/2 nutmeg freshly grated

3 peeled and crushed cloves of garlic

  1. Peel and crush the garlic
  2. Finely shred the greens
  3. Heat up a frying pan
  4. Add the butter and cook the smell resembles roasted hazelnuts
  5. Add nutmeg and garlic and cook for about 30 seconds until aromatic
  6. Tip in the kale and stir to combine all ingredients
  7. Cook for 1 minute
  8. Remove from the heat and serve as required
