Celeriac Remoulade
One of the most historic and famous salads of France. Celeriac is a very under-rated and nutritious vegetable and grows very well in Wiltshire . It has a celery taste but also a satisfying starchiness. This salad needs a punch from the mustard and lemon to make the taste of celeriac shine, but don’t over-power it
Ingredients
Makes 4 -6 portions
1 grated peeled medium celeriac
For the dressing
juice of ½ a lemon
2 tbls of mayonnaise
1 tbls of runny honey
1 tbks of sour cream/creme fraiche/natural yoghurt
approx 4-6 anchovy fillets snipped with scissors (optional)
2 tsp of whole grain mustard
1 tbls of finely chopped parsley
good pinch of salt & and freshly ground pepper
Garnish with lemons, parsley, anchovies
Method
- Make a dressing and then fold in the grated celeriac. season and garnish
