Of all the countries in the world where the 'everyday' ingredients that we are so used to originate, Mexico is clearly at the very top. The Spanish could not have believed their luck when they landed there 500 years ago. They wasted no time in setting up trade with far away countries with the bounty that they discovered - corn, chillies, avocado, tomatoes, vanilla and chocolate.

Arrive at Owl Lodge for 7.00pm - 7.30pm

Dinner commences 7.30pm - a three-course dinner in the Dutch barn, around the central fire pit.

Come dressed for Autumn in the countryside!

Authentic Mexican cuisine has hardly changed since the Mayan Indians culinary offerings 2000 years ago. They were experts at living off the land and masters of growing produce on poor soil. Their dynasty had slowly faded out by the 14th century and was overtaken by the Aztecs, whose empire, in turn, evaporated when the Spanish Conquistadors arrived in 1519.

With live guitar music from Andrew Hurst, a roaring fire in the centre of the barn and a menu that is inspired by authentic Mexican food - what a warming way to celebrate the return of the dark, chilly evenings!

Free-range chicken mole (promounced mo-lay) or vegan mole

Live cookery demonstration of this classic dish from Oaxacca, which is widely considered to be the gastronomic capital of Mexico

served with roasted peppers and aromatic rice
